Pumpkin Bars

Cake

  1. Preheat the oven to 350.
  2. Grease a 9x13 inch baking pan.
  3. Mix 2 c all-purpose flour, 1 t baking soda, 1/2 t baking powder, 1/2 t salt, 1/2 t ground cloves, 1 t ground cinnamon, 1 t ground nutmeg, and 1 t ginger.
  4. Beat 3/4 c melted butter with 1 c sugar on medium speed until just combined.
  5. Add 4 eggs one at a time. Beat each one in before adding the next.
  6. Beat in 2 c pumpkin.
  7. Add the dry ingredients and mix on low until well combined.
  8. Pour the batter into the pan and smooth the top.
  9. Bake 15 minutes.
  10. Set on a wire rack and let cool completely.

Frosting

  1. Beat 8 T room-temp butter with 6 oz room-temp cream cheese on high speed until smooth and creamy.
  2. Beat in 1/8 t salt and 1 t vanilla.
  3. Add 3 c powdered sugar and beat on low for 30 seconds, then switch to high speed and beat until light and creamy.
  4. Spread the frosting on the cooled cake.
